Deborski Family Ownership, 1974-present (50 years)
In 1974, Edward Deborski (1938-2002) and Carol Kuncis Deborski moved their business, Old
Style Sausage, from 704 Main to 1219 Courtesy Road. They produced and sold Italian, German,
and Polish sausage and also introduced the Borogie — a meat pie similar to a perogie with a
variety of fillings (Appendix B). For the next fifty years, the Deborski family has continued to run
Old Style Sausage as a family business, employing local residents and taking an active part in
Louisville community events by donating food and sponsoring events such as La Festa, Fourth of
July celebrations, and the Spaghetti Open Golf Tournament.
Edward Deborski was a third -generation Louisville resident, beginning with his grandparents,
Costek Gus Deborski and Mary Pankoski who immigrated from Russian Poland. They arrived in
Colorado in 1895 where Gus worked as a coal miner in Superior and Louisville. Their second
son, Andrew Deborski (1914-2000) also worked as a coal miner and was Edward Deborski's
father.
In 1984, Edward and Carol Deborski developed the Louisville Store & Lock subdivision and built
rental storage units behind the original Old Style Sausage building. In 2013, their son Mike
Deborski took over the business and continues the tradition of supporting local events today.
Boulder County Assessor current image
