Re- inventorying emissions and assessing current and future progress. <br />5.2 Data Collection <br />Due to data availability, or lack thereof, several of the key indicators of this inventory <br />were developed using proxies to estimate consumption and associated emissions. One source <br />of uncertainty in this regard is the consumption of food. As stated in section 3.6.4, food data <br />was found for the western United States from the 2012 Economic Census by the US Bureau <br />of Labor Statistics16. This metric assumes that Louisville's households consume food the <br />same way every other household in the western region of the country does. It also fails to <br />take business spending on food into account. This is a limitation of the methodology. <br />About 11% of the embodied energy in food comes from transporting it long distances to <br />its final consumers22. By embracing farmers markets and locally grown food, the residents of <br />Louisville may be avoiding some of these GHG emissions. To capture this information, <br />Louisville may want to work in conjunction with the city and county of Boulder, CO to <br />create a food survey to glean information on how much an average household spends on food <br />annually, what types of food (poultry, dairy, red meat, fish, vegetables, fruit, grains, etc.) are <br />purchased, and the portion of households' food that is locally sourced. <br />6.
