Public Hearing — New Brew Pub License — Pau Hana Brewery LLC
d/b/a Pau Hana Brewery LLC — 1700 Dogwood Street
Chairperson Lipton opened the public hearing on the brew pub liquor license
application. Secretary Hanson stated the application was complete and included
in the Authority packet. Background checks were conducted. The hearing had
been posted and published in accordance with state law. There was no reason
found to require denial of the application.
Chairperson Lipton called for any member disclosures. Bart Watson noted he is
employed by a trade association representing breweries and brew pubs, but did
not feel it would affect his decision for this hearing.
Lipton called for any objections to the boundaries of the neighborhood being the
current city limits of the City of Louisville. Hearing no objections, she moved the
entire application be made a part of the record of this hearing. Carlson seconded.
All in favor.
Lipton called for an applicant presentation.
Gregory Larson, 4273 Peach Way, Boulder, CO introduced himself to the
Authority and noted he was available to answer any questions. Carlson asked
the applicant to tell the Authority what he would like to do. Larson noted they are
putting in a brew pub and full kitchen. They plan to be open Monday through
Saturday, closed Sunday. They plan to serve lunch and close around 9 PM when
the gym next door closes. The feeling is this compliments the gym next door and
adds an eating spot to the Colorado Technology Center. There will also be event
space. He reported the plan is to have 8-10 employees. He noted they will
require training for both the service of alcohol and food.
