both born in Italy and were part of Louisville's large Italian community, started the <br />restaurant in about 1919 in the building that had previously been the site of Huber's <br />Drug Store. The Colacci establishment was also known, early on, by such names as <br />Colacci's Tavern and "Mike Calacci's Lunch & Short Orders." Records indicate that in <br />about 1936, it was renamed the Blue Parrot Cafe. <br />The current neon sign on the property was installed in the 1955, consistent with the <br />popularity of neon signs for businesses nationally at that time. The best documented <br />change was to add the words "Joe Colacci's," which is believed to have taken place in <br />the 1970s.
