Louisville Local Licensing Authority
Meeting Date: March 29, 2004

Mr. Silvano DeLuca, 1018 Gapter Road, Boulder, CO, applicant, entered his name for
the record and was given the oath by Secretary Hanson.

Chairperson Koertje called for the applicant presentation.

Mr. Deluca reported he previously owned Pasta Antica Roma in Boulder and had been
looking for a location in Louisville. The premises at 321 S. McCaslin Blvd. seem the
right location for this Italian restaurant. It has approximately 3000 square feet plus a
patio area. The cuisine will be Italian with the service of alcohol being primarily beer and
wine. Small appetizers, pasta dishes, meat, fish and pizza will be available. Lunch and
dinner will be served.

Mr. DeLuca reported he thought he would employ about 40-50 people in total. He was
asked if he would have employees attend liquor training. He responded he wbuld send
all employees to training. He was asked if any violations had occurred at his previous
location and the answer was no. He was asked if the bar would be open beyond food
service hours. He responded that if people were there for Happy Hour there would be
appetizers or if staying later, small appetizers and pizza would always be available. He
reported they had hoped to open April 15th but there is still a lot of work to be done. Mr.
DeLuca was asked about ,control of the patio and responded servers would be
specifically assigned to the patio.

Chairperson Koertje called for any more questions for the applicant. He then called for
anyone speaking in favor or against the application. Hearing neither, he asked the
applicant for any further comments.

Mr. DeLuca expressed his hope that the business goes well and invited the Authority
members to come and dine.

Chairperson Koertje called for a motion to grant or deny the application.

Paige moved the Authority find the applicant of good moral character, that the
inhabitants of the neighborhood desire the license be granted, that the license will meet
the reasonable requirements of the neighborhood, that all City and State law
requirements have been met and that, based on these findings, the Local Licensing
Authority approve issuance of a hotel and restaurant license for Pasta Antica Roma,
Inc., doing business as Pane E Vino. Wilson seconded. Roll Call Vote: Koertje-yes,
Paige-yes, Mulvahill-yes, Wilson-yes and Lipton-yes. The motion carried.

POLICE DEPARTMENT REPORTS

Chairperson Koertje commented a number of people remained in the audience
and wanted to clarify the Authority would only be reviewing the Police Department

4

G\UQUOR\2004\MINUTES\MINUTES MAR 04.DOC
