PROCLAMATION <br />BLUE PARROT DAY <br />FEBRUARY 7, 2017 <br />WHEREAS, the history of the Blue Parrot Restaurant in Louisville began when <br />Michael and Mary Colacci, immigrants from Italy, opened a cafe at the <br />corner of Pine and Main Streets in 1919; and <br />WHEREAS, Michael and Mary saw that diners hungered for such dishes as <br />homemade pasta, tomato sauce, meatballs, and sausage; and <br />WHEREAS, the Blue Parrot drew diners from all over the Denver metro area and <br />made Louisville a nationally known destination associated with hearty <br />Italian food; and <br />WHEREAS, the restaurant evolved into a driving force of the Louisville economy, <br />employing many dozens of residents and leading to the establishment <br />of other spaghetti restaurants in Louisville; and <br />WHEREAS, the Colacci family has continued to operate the Blue Parrot for 98 <br />years and during that time emphasized the bonds of family and friends <br />and made the restaurant and its bar a hub of community interaction; <br />and <br />WHEREAS, with the Colacci family's closure of the restaurant after 98 years, <br />Louisville owes the Colacci family a debt of gratitude for its longtime <br />stewardship of the Blue Parrot; and <br />NOW, THEREFORE, BE IT RESOLVED, that I, Bob Muckle, Mayor of the City of <br />Louisville, do hereby proclaim February 7, 2017 as Blue Parrot Day in Louisville and <br />encourage residents to join with the City in honoring the Colacci family and the Blue <br />Parrot Restaurant. <br />DATED this 7t" day of February, 2017. <br />Robert P.
