Member Jeffers asked about policies related to selling to visibly intoxicated persons. Mr. Pasquini <br />stated that the issue is not addressed in the handbook but that it is the policy of Pasquini's Pizzeria <br />to provide food, free of charge, for those visibly intoxicated to take with them and consume off <br />the premises. He mentioned that due to the close proximity of a full service bar at the Denver <br />restaurant, it is an issue they have addressed. Mr. Pasquini stated that Pasquini's Louisville is <br />intended as a family restaurant, closing at midnight on Fridays and Saturdays, 10:00 p.m. <br />weeknights, and not a bar, and that he did not foresee problems. Mr. Pasquini agreed that once <br />employees have been hired for the Louisville restaurant, they would be enrolled in the local liquor <br />training program. <br /> <br />Jeffers asked if the business includes take-out and delivery, affirmed by Mr. Pasquini who stated <br />they expect about 30% would be delivery. Mr. Pasquini offered that the business will be open for <br />lunch and dinner and serve pasta, calzones, subs, pizza and desserts. <br /> <br />Kimmet asked if both front entrances would be utilized. Mr. Pasquini stated that the south door <br />would be locked and not used. <br /> <br />Members discussed the area formerly used as a banquet room and most recently leased to an <br />independent business. Mr. Pasquini stated his desire to have the entire premise licensed but stated <br />that the area being discussed will not be used until it is renovated. The Authority advised that the <br />applicant must receive a building permit for all renovations, request a courtesy inspection by <br />Building Safety and ultimately a certificate of occupancy before opening that area up for business. <br /> <br />Mr. Pasquini stated that he has not started hiring but hopes to open sometime in March. Sargeant <br />Riggins offered that once the business opened, a Police Department officer would come by and <br />review a checklist of items required for state and local liquor compliance. <br /> <br />Jeffers asked the applicant about the current "Colacci's" sign. Mr. Pasquini stated that they <br />intend to keep the sign but change the name to Pasquini's and are in contact with Paul Wood, <br />Planning Director, on setting a hearing, subject to Council approval, for the sign variance. <br /> <br />POLICE DEPARTMENT REPORT <br /> <br />Sergeant Riggins apologized to the Authority for his absence from recent meetings. He responded to <br />questions raised at the previous Authority meeting. <br /> <br />At the previous meeting, members asked officer Jokerst what action Sergeant Riggins was requesting by <br />the Authority in reference to a motorcycle rally incident at Pine Street Junction.
