Louisville Local Licensing Authority <br />Meeting Date: April 30, 2001 <br />4 <br /> <br />Member Jeffers moved to admit the highlighted map indicating the areas surveyed within the City into the record <br />of the hearing. Vice Chairperson Lipton seconded the motion. All members were in favor, moron carried. <br /> <br />Attorney Stonbraker called Ms. Tonya Valey, 9690 Brentwood Way #204, Westminster, Colorado 80021. <br /> <br />Stonbraker asked Ms. Valey how long she has been working for the Chipode organization. Valey stated a litde <br />over two years. Stonbraker asked how long she has been area manager for Chipotle's. Valey stated one year. <br />Stonbraker asked if Chipotle Mexican Grill is licensed to do business in Colorado. Valey stated that it is. <br />Attorney Stonbraker asked if the Chipode in Louisville has a valid lease for the premises to be licensed. Ms. <br />Valey stated that it does. <br /> <br />Attorney Stonbraker asked Ms. Valey to describe a Chipotle restaurant. Ms. Valey stated that patrons enter the <br />restaurant and approach the service counter where staff prepares the food to order. Patrons are guided through <br />each station to the cashier where they pay for their food and beverages and then are seated in the dining area. <br />The dining area d6cor is a light colored wood and high polished stainless steel with vaulted ceilings. <br /> <br />Stonbraker asked Ms. Valey if the Chipotle in Louisville is currently open for business. Ms. Valey stated that it <br />is. Stonbraker asked Ms. Valey if they have received any patron requests for alcoholic beverages. Ms. Valey <br />stated that they have. <br /> <br />Stonbraker asked Ms. Valey to describe how the service of alcoholic beverages is handled at a Chipotle Mexican <br />Grill. Ms. Valey stated that beverages are ordered when a patron reaches the cashier. They can order beer, wine <br />or margaritas and are asked for I.D. if they appear to be under thirty years of age. Once the food and beverages <br />are .purchased, patrons are permitted to have their meal in the dining area or on the patio. <br /> <br />Stonbraker asked Ms. Valey to describe the patio area and access. Ms. Valey stated that the patio area is fenced <br />and that patrons have to exit out through the restaurant. She stated that the patio is clearly in sight from the <br />service and cashier counters. <br /> <br />Attorney Stonbraker asked Ms. Valey to describe the alcohol training that Chipofle employees receive. Ms. Valey <br />stated that all the supervisors are required to complete liquor liability training. She continued that supervisors <br />must be on the premises at all times and that they are regularly required to walk through the dining and patio <br />area to check on patrons. Ms. Valey stated that supervisors are also trained to recognize signs of intoxication <br />and how to handle an intoxicated person. Ms. Valey stated that supervisors are to offer an intoxicated person a <br />meal with a non-alcoholic beverage and to offer a taxi ride for that person. Stonbraker asked Ms. Valey if the <br />employees at the Chipotle in Louisville have been signed up for the liquor training offered through the City of <br />Louisville. Ms. Valey stated that they have signed up for the next quarterly session in July. <br /> <br />Stonbraker asked Ms. Valey how much of Chipotle's gross sales are in alcoholic beverages compared with food <br />sales. Ms. Valey stated less than one percent. Attorney Stonbraker asked Ms. Valey if Chipofle's was aware of <br />the manager registration requirement and that any change must be reported within thirty days. Ms. Valey stated <br />they are. <br /> <br />Stonbraker asked the Authority if they had any questions for Ms. Valey. Member Jeffers stated that he had been <br />at the restaurant over the weekend and was pleased that all the appropriate signage was posted and that there <br />were no alcoholic beverages in the cooler. Member Jeffers asked if the design and layout for this Chipotle's was <br />similar to other locations, specifically the back counter dining area.
