Louisville Local Licensing Authority <br />Meeting Date: June 25, 2001 <br /> <br />Mr. Hayden stated that he has had difficulty finding and keeping cooks, and that he now works in <br />the kitchen between 40 and 50 hours per week. Hayden admitted that food was not available the <br />evening of the incident and that even if the cook had prepared the food as requested, the bartender <br />was not aware that food was available. <br /> <br />Mr. Hayden stated that the person involved in the incident was only served two drinks and was well <br />known by the bartender. He stated that the bartender knew that the woman was there on her lunch <br />hour, as she had been in the past, and that she normally did not eat. Mr. Hayden stated that the <br />woman was served chips and salsa, which she did not eat. <br /> <br />Mr. Hayden stated that the two White Russians contained about three ounces of alcohol in total. <br />One ounce was 40 proof Kahlua, and two ounces of 80 proof vodka. Mr. Hayden stated that the <br />bartender told him that she always made weak drinks for the woman because she had complained <br />once that the drinks were too strong. <br /> <br />Mr. Hayden stated that he did not believe the results of the PBT test. He stated that the machines <br />are known to be inaccurate and are not permissible as evidence in a court of law. <br /> <br />Mr. Hayden stated that he was sorry the incident occurred and that he has made the necessary <br />changes to prevent future incidents. <br /> <br />Member IGmmett asked Mr. Hayden if it was correct that the kitchen has been shut do~vn at 8:00 <br />p.m. ever since he has owned Gentleman Jim's. Mr. Hayden stated that xvas correct, although they <br />have stayed open longer if the bar is busy. <br /> <br />Mr. Hayden stated that his last cook was padding his tirnesheet by indicating that he was xvorking <br />until 9:30 or 10:00 p.m., when in fact he was leaving at 8:00 p.m. Hayden stated that he frred the <br />cook. <br /> <br />Chairperson Lipton expressed concern regarding the number of people in the bar on the night of <br />the incident, and asked if the bartender could have called for assistance on the night of the incident. <br />Mr. Hayden stated that any bartender is free to call him for help if the bar gets too busy for them to <br />handle. Hayden stated that he lives a short distance from the bar and that his staff has his home and <br />mobile phone numbers. <br /> <br />Member Koertje asked how many staff ~vould have normally been on duty on a Wednesday night, <br />the same night as the incident occurred. Mr. Hayden stated there would have been one bartender <br />and a cook up until 8:00 when the cook would leave. Hayden stated that if the bar was busy, the <br />cook should have stayed to help. <br /> <br />Chairperson Lipton asked Mr. Hayden how long the bartender Lisa has worked for him. Mr. <br />Hayden stated approximately seven years. Lipton asked hoxv many liquor training sessions Lisa has <br />attended. Mr. Hayden stated at least ten. <br /> <br />Member Kirnmett asked again if she xvas the only one xvorkmg that evening and was responsible for <br />the approximately 50-60 patrons as indicated in the police report. Mr. Hayden stated that he <br />questioned the number of people in the premises that evening.
