LCityof
Louisville
Golf Course Advisorj' Board Minutes
November 17 2014
COLORADO - SINCE 1878
9. Golf Course Tour
Due to snow on the ground, the planned walking tour of the golf course on Saturday
Nov 15 was cancelled but a well - attended public meeting was held to provide an
update on progress and answer questions from the public. Notes from that meeting
will be officially published in due course.
10. Update on Food and Beverage Concession.
Bids were solicited from multiple possible vendors but only one, Sandtrap LLC,
provided a bid supported by a presentation and a sample of their offerings. Sandtrap
LLC is associated with a number of successful restaurants in the area, Le Peep in
Louisville and Delvickios in Superior and Broomfield. Management of Sandtrap
presented their vision for golf course catering which covers both family dining as well
as service tailored to golfers. Staff is drafting an agreement that should be presented
for City Council approval in December. The contract requires catering service,
including on- course drinks carts for a minimum of March through October. The
planned contract is for a 4 year period with the option of a further 3 year extension.
Either side has the right to terminate the contract given an agreed notice period. The
City can potentially work with the supplier on capital improvements for the restaurant
and kitchen. The supplier will pay the City a fee to operate the concession and the
City has basic control over pricing and menu selection — with a mutual aim to make
this a successful business. The restaurant will be styled around the overall mining
theme for the course. The interview panel was impressed by the proposal from
Sandtrap with the only caveat that Sandtrap has no experience in operating in a golf
club environment. Sandtrap has offered to meet with golf stakeholders to fine -tune
their service plans. Specific items brought up by the board and the Mens Club are:
• Availability of fast - service items for golfers at the turn
• Tolerance for golfers occupying restaurant space after rounds or events even
if not buying food or beverages
• Availability of Coors Light for Mens Club members who are aficionados of fine
beer.
• Support for tournaments and banquets
• The restaurant will be included in golf course signage and marketing
promotions
11. Budget
The golf course plans for completion of the renovation and startup are covered
within the 2015 budget.
The position for Head Golf Professional has been posted. The job description
requires a Class A PGA Membership (or working towards that qualification) and 5
years experience as a Head or Assistant Professional.
