Louisville Local Licensing Authority <br />Meeting Date: September 30, 2002 <br />Page 3 of 5 <br /> <br />hasn't been one negative remark made about the establishment. Vice <br />Chairperson Koertje asked how long the renovations have been going on. Mr. <br />Flores stated that renovations have been going on for about three weeks. Mr. <br />Flores added that the restaurant would bring in people from surrounding areas <br />that are familiar with the restaurant he owned in Boulder. <br /> <br />Member Kimmett inquired about live music in the patio area. Mr. Flores <br />explained that once a week he had a Mariachi band play at his other location and <br />would like to continue that tradition in Louisville. Member Kimmett suggested <br />that Mr. Flores check with the surrounding neighborhood before allowing any live <br />music on the patio since there had been incidents in the past that caused <br />concern. <br /> <br />Member Sackett asked if the patio area would be controlled. Mr. Flores replied <br />that a six-foot high fence encloses the patio and the only way out, other than <br />through the restaurant, would be through an emergency exit. <br /> <br />Vice Chairperson Koertje asked if there would a bar in the patio area. Mr. Flores <br />stated that there will be only one bar and it is located inside the restaurant. <br /> <br />Member Wilson inquired about surveys being done for new businesses and <br />wondered if it was a requirement. Attorney Harrington stated it is the applicant's <br />burden to show that the reasonable requirements of the adult inhabitants in the <br />neighborhood are met, and conducting a survey is only one way to demonstrate <br />that. <br /> <br />Member Kimmett asked what type of training program would be provided for the <br />employees at Cancun Mexican Restaurant. Mr. Flores responded that he sent <br />his employees to Boulder for training. He also mentioned that he has been in the <br />restaurant business for 12 years and, has never had a liquor violation. Member <br />Kimmett informed him that Louisville has a training program also. <br /> <br />Vice Chairperson then closed the public hearing and called for member <br />discussion and comments. Member Wilson wondered if there was any more <br />evidence needed since there were no objections from the community. Attorney <br />Harrington stated that notice of the public hearing was posted and published and <br />it is therefore safe to presume that interested persons would appear at the <br />hearing to object to the liquor license. <br /> <br />Member Sackett made a motion to approve the hotel and restaurant liquor <br />license for Jalisco Fiesta, Inc., d/b/a Cancun Mexican Restaurant conditioned <br />upon the Licensee providing copies of all notes securing financing of the <br />business immediately after the purchase is completed. Member Kimmett <br />seconded the motion. Roll Call Vote: Koertje-yes, Kimmett-yes, Sackett-yes, <br />Wilson-yes.
