HERBERT: <br /> <br />Our business is family oriented and family run. There is always a family member at <br />all times at the pizzeria. It will always be the responsibility of one of the family <br />members to be there and supervise sales of alcohol. Any handling of the alcohol is <br />going to be done by family members. It is going to be a controlled system. <br /> <br />BEATRICE: <br /> <br />To make sure that we are not selling to minors, we will always be in control. We <br />know the consequences, who would we take the risk. <br /> <br />KIMMETT: <br /> <br />What training have you had to identify minors? <br /> <br />HERBERT: <br /> <br />Through the type of license and we will have a state license book available to verify <br />for various licenses. It will always be through our own consent. None of us have <br />had any formal training. I am aware of training classes through the city. <br /> <br />KIMMETT: <br /> <br />Your register is going to be in the middle of the restaurant and you have table up to <br />the doorway. How are you going to control people from leaving with beer if you are <br />in the back of the store? <br /> <br />HERBERT: <br /> <br />Signs, and we will be watching and staff people who are on the floor busing tables. <br />that would be the only way. <br /> <br />KIMMETT: <br /> <br />So, this is the first place that you will have alcohol. Have any of you worked in a <br />place that served alcohol? <br /> <br />BEATRICE: <br /> <br />I did, in Connecticut. I was a waitress and served alcohol in a Country Club. <br /> <br />HERBERT: <br /> <br />We don't want it to be a bar type scenario. We just want the option to serve wine and <br />beer for the customer. It is not a place for people to go and party and get out of <br />control. <br /> <br />There was discussion regarding the hours of operation and that hours would be based upon demands.
