Mr. O'Roarke asked Mr. Boatright if full meals are provided at Carrabba's Italian Grill. <br /> <br />Mr. Boatright answered yes, and stated that Carrabba's Italian Grill profits are derived from 85% of food <br />and 15% alcoholic beverages. <br /> <br />Mr. O'Roarke asked if it would be accurate to say that no less than 25% of the restaurant's gross income <br />will be derived from alcohol service. <br /> <br />Mr. Boatright answered yes. <br /> <br />Mr. O'Roarke asked Mr. Boatright what type of training would his employees receive to insure that they <br />adhere to regulations regarding alcohol beverage service. <br /> <br />Mr. Boatright stated that Carrabha's had a very strict alcohol awareness program currently in place. It is <br />sanctioned by the Outback Steakhouse Group, and Carrabba's Italian Grill Inc., called a liquor awareness <br />test. Each employee serving alcohol must take a fourteen-question test that addressing slurring of <br />language and other signs of intoxication, ID procedures. There is also a three-drink program, whereby <br />when a customer orders a third drink, the employee is required to notify the manager immediately. The <br />manager then monitors the table and makes the determination as to whether that table will be served any <br />more alcohol. <br /> <br />Mr. O'Roarke asked Mr. Boatright what instructions his employees will receive with regards to false ID, <br />and how will his staff deal with physical, ly intoxicated persons. <br /> <br />Mr. Boatright stated that false ID's would be immediately reported to the police department. When <br />dealing with physically intoxicated persons the manager would be involved and the local police <br />department would be notified. Intoxicated persons would not be served. <br /> <br />Mr. O'Roarke asked Mr. Boatright if Carrabba's Italian Grill sell any packaged wine or beer. <br /> <br />Mr. Boatright answered no. <br /> <br />Mr. O'Roarke asked Mr. Boatright if all wine and beer must be consumed on the premises. <br /> <br />Mr. Boatright answered yes. <br /> <br />Mr. O'Roarke asked Mr. Boatright the hours of operations for Carrabha's Italian Grill. <br /> <br />Mr. Boatright stated that Carrabba's is a dinner only concept, and will open at 4:00 p.m. in the afternoon <br />and closes at 10:30 p.m. during the week, and is opened until 11:30 p.m. on Friday and Saturday nights. <br /> <br />Mr. O'Roarke asked Mr. Boatright what service Carrabba's Italian Grill will provide to the community. <br /> <br />Mr. Boatright stated that Carrabba's is a concept focused on quality of food, large portions, and attention <br />to details when preparing meals. Along the same lines as Outback Steakhouse, they are very involved in <br />the community and do a lot of charity events locally. Part of their marketing approach is to give back to <br />the community. They go into the schools and churches to help with fundraisers, and provide all food <br /> <br /> <br />
