Louisville Local Licensing Authority <br />Meeting Date: October 30, 2000 <br />Page 7 <br /> <br />Chairperson Myers moved that the complete application as contained in the Authority packets be made a <br />part of the record of the hearing. Vice Chairperson Lipton seconded the motion. All members were in <br />favor, the motion carried. <br /> <br />Chairperson Myers asked the applicant to come forward, state his name and address for the record and <br />take the oath. <br /> <br />Mr. William Wildberger, 502 Marion Street, Denver, Colorado came forward and introduced himself as <br />Vice President of Tokyo, Inc. He stated that Kelly Pietrs of Esquire Petitioning Services, LLC, 639 <br />Ivanhoe Street, Denver, Colorado and Holly Henry, 651 Eldorado #721, Broornfield, Colorado, <br />registered manager for the Louisville restaurant were also present and would be testifying at the <br />proceedings. <br /> <br />Chairperson Myers asked all the witnesses to come forward and take the oath. <br /> <br />Deputy City Clerk Bolte asked Mr. Wildberger, Ms. Pietrs and Ms. Henry to raise their right hand and <br />proceeded with the oath, "do you solemnly swear or affirm under penalty of perjury that the testimony <br />you are about to give will be the truth, the whole truth, and nothing but the truth. <br /> <br />Mr. Wildberger: Yes. <br />Ms. Pietrs: Yes. <br />Ms. Henry: Yes. <br /> <br />Chairperson Myers asked Mr. Wildberger to make his presentation. <br /> <br />Mr. Wildberger stated that Tokyo, Inc. is a Colorado corporation that operates six restaurants in the <br />Denver area and the Louisville restaurant will be the seventh. He continued that the corporation is five <br />years old and that the restaurants offer contemporary, quick-serve meals. <br /> <br />Mr. Wildberger stated that the sale and service of alcohol would occur at the cashier counter and that <br />they will only be providing bottled beer. He further stated that their business is targeted toward lunches <br />and family oriented dinners and that there is no bar area in any of the Tokyo Joe' s restaurants. Mr. <br />Wildberger stated that they have a two beer per person limit as part of their company policy and that <br />alcohol sales account for a very small portion, approximately 2%, of their total revenue. <br /> <br />Mr. Wildberger outlined the company's in-house liquor training program noting that a violation at the <br />Greenwood Village restaurant was used to produce improved policies and training. He noted that copies <br />of their liquor related rules and signage are included in member packets. <br /> <br />Mr. Wildberger informed the Authority that a finalized lease agreement would be submitted to the <br />Authority as soon as there is a commencement date. He anticipated opening within the next three <br />weeks. <br /> <br />Mr. Wildberger stated that Ms. Pietrs was present to answer any questions concerning the petition <br /> <br />7 <br /> <br /> <br />
